Zucchini Fritters With Avocado Dill Dip Recipe

Zucchini is a very versatile food. It can be eaten raw or cooked, and it is so good for your body.

Zucchini is great for people who want to lose weight.  It contains a  lot of fiber and water, and virtually no calories.

The skin of zucchini is loaded with vitamin C and polyphenols. These compounds support the healthy functions of the adrenal and thyroid glands, and help regulate the levels of insulin.

Additionally, zucchini has high levels of antioxidants such as glutathione peroxidase and superoxide dismutase which inflammation and oxidation. These antioxidants help support the proper function of the immune system.

Zucchini contains high levels of folate which can boost the performance of the brain and can help prevent the onset of Alzheimer’s disease.

 

So, if you wish to get all the benefits of zucchini, here is how to make these tasty zucchini fritters:

Zucchini Fritters with Avocado Dill Dip

Ingredients:

  • 2 zucchinis 
  • 1 clove garlic peeled and minced
  • 1/4 cup fresh basil
  • 2 organic eggs 
  • 1/4 cup gluten-free flour (find it here)
  • 1/4 cup fresh oregano
  • 1 tbsp lemon zest
  • 1/4 tsp onion powder (find it here)
  • Salt and pepper

Dip Ingredients

  • 1/2 cup finely chopped fresh dill
  • Avocado Dip Base

Directions

Place grated zucchini in a colander over the sink. Add salt and gently toss to combine; let sit for 10 minutes. Using a clean dish towel or cheese cloth, drain zucchini completely.

Add the egg, garlic, basil, oregano, lemon zest, onion powder, salt, and pepper, and mix well.

Slowly add the flour and stir, but make sure you do not create lumps. 

Heat olive oil in a large skillet over medium high heat. Scoop tablespoons of batter for each fritter, flattening with a spatula, and cook until the underside is nicely golden brown, about 2 minutes.

Flip and cook on the other side, about 1-2 minutes longer.

Mix the ingredients of the avocado dill dip, and enjoy your delicious zucchini fritters!
