Your Sourdough Bread Might Be Giving You Cancer

Sourdough bread is often marketed as a healthier alternative to white bread—but what if your daily loaf is actually a toxic trap? Many store-bought and even bakery sourdoughs are made with bromated flour and contaminated with glyphosate, both of which have been linked to serious health issues, including cancer.

⚠️ The Hidden Dangers of Bromated Flour

Bromated flour contains potassium bromate, a chemical used to strengthen dough and promote a higher rise. While it’s banned in over 100 countries, including the EU, UK, and Canada, it’s still allowed in the United States.

Potassium bromate is classified as a possible human carcinogen by the International Agency for Research on Cancer (IARC). It has been shown to cause kidney, thyroid, and gastrointestinal tumors in animal studies. Even small amounts may pose serious risks due to cumulative exposure over time.

Ingredients:

  • 3 cups organic unbleached flour (e.g., einkorn or spelt) get it here 
  • 1½ cups filtered water
  • ½ cup active sourdough starter (fed and bubbly)
  • 1½ tsp sea salt

‍ Instructions:

  1. Mix flour, water, and starter. Let sit for 1 hour (autolyse).
  2. Add salt, knead gently. Cover and let rise for 4–6 hours, folding every hour.
  3. Shape into a loaf, place in a floured banneton, and refrigerate overnight.
  4. Preheat oven to 475°F (245°C) with a Dutch oven inside.
  5. Score dough, bake covered for 20 min, then uncovered for 25 min.
  6. Cool completely before slicing. Enjoy!
