Strawberry Spinach Salad with Strawberry Vinaigrette

Spinach is one of the most nutritious foods ever known. Spinach is a great source of Vitamin K, Vitamin A, Manganese, Folate, Magnesium, Iron, Vitamin C, Vitamin B 2 (Riboflavin), Calcium, Potassium, and Vitamin B 6. It’s loaded with mineral and vitamins that can be an effective source of healing for a multitude of health ailments.

Spinach is particularly high in folate that has been shown to reduce high blood pressure and inflammation of blood vessels.

This Strawberry Spinach Salad is light, healthy, easy to make and delicious. You will only need a few simple healthy ingredients. It’s perfect for year round!

Strawberry Spinach Salad with Strawberry Vinaigrette

INGREDIENTS

1 pound fresh organic spinach, washed, torn into pieces
1 pint fresh organic strawberries, sliced
1/3 cup Strawberry Vinegar
1/2 teaspoon stevia (find here here)
1 teaspoon dry mustard
1 teaspoon  sea salt
3/4 cup olive
1-1/2 tablespoons poppy seeds
feta cheese and walnuts (optional)

INSTRUCTIONS

Add spinach and strawberries to a large bowl.

In a smaller bowl, mix together Strawberry Vinegar, stevia, mustard, and salt. While still whisking, add oil into mixture.

Add the dressing to spinach and strawberries and toss to coat. Sprinkle some poppy seeds on top.

STRAWBERRY VINEGAR
INGREDIENTS
1-1/2 cups small strawberries, stems discarded
1-1/2 cups white-wine vinegar
1/2 teaspoon stevia (find it here)

Directions

Place strawberries and vinegar in a jar with a tight lid. Leave in the sun for  3-4 days (the vinegar should be bright red).

Strain and discard berries. Stir in stevia; heat on medium heat until mixture comes to a boil for about 10 minutes

Cool and pour into a clean bottle.  Store in the refrigerator.
