HEALTH DANGERS OF OXALATES
Most plants are known to contain oxalates, making it difficult to completely avoid them when consuming fruits or vegetables. Oxalates are particularly prevalent in leafy greens like spinach, chard, and kale. The main culprit behind the negative effects of oxalates is oxalic acid.
1. Kidney Stones
The primary focus of studies regarding the influence of oxalate is centered around its impact on the kidney. When there is an elevated level of oxalate in the bloodstream, it is transported to the kidney. The majority of soluble oxalates are eliminated through urine, highlighting the significant role played by the kidney. Within the kidney, oxalates have the ability to combine with calcium and embed themselves within the tissue. Oxalates act as a magnet for minerals, with calcium being the most commonly attracted mineral. However, since oxalates are quickly eliminated from the body, the calcium it attracts is not effectively absorbed. Therefore, consuming calcium and high oxalate foods simultaneously will result in only a small portion of the calcium being utilized.
3. Mitochondrial Dysfunction
Oxalates have the potential to accumulate in various parts of the body such as the brain, eyes, muscles, and joints. The sharp needle-like structure of oxalates can cause physical harm to tissues and disrupt the cellular composition. Individuals with kidney stones have exhibited reduced mitochondrial function in their white blood cells. 4. Inflammation
