Avocado dip with crispy sweet potato chips
Ingredients
(6- to 8-ounce) sweet potatoes, thinly sliced crosswise into ⅛-inch discs
Extra-virgin olive oil
Sea salt
Freshly ground pepper
Directions
Preheat oven to 450 degrees F. Place sweet potato discs on a baking sheet and toss to coat with olive oil, salt, and pepper to taste. Spread in an even layer and bake until golden and crisp, 25-30 minutes, flipping halfway through.
AVOCADO DIP:
- 2 garlic cloves, crushed
- 1 ripe avocado
- 1/4 cup (60 ml) plain yogurt
- 1 Tablespoon fresh lemon juice
- Salt & pepper
- Fresh cilantro, cut
Directions
In a food processor, mix the garlic cloves until minced. Add the ripe avocado, yogurt, fresh lemon juice, and mix until smooth texture. Season with salt and pepper, and add cilantro on top.
Serve chips and dip immediately.
